Pumpkin Snickerdoodles

3 3/4 cup flour
1 1/2 tsp. baking powder
1/2 tsp cinnamon
1/4 tsp nutmeg
1 cup unsalted butter
1 cup sugar
1/2 cup brown sugar
3/4 cup pumpkin puree
1 large egg
2 tsp vanilla

For coating:
1/2 cup sugar (they say 1 tsp cinnamon and 1/2 tsp ginger and dash of allspice
but I used Pumpkin pie spice!!!)

Mix dry and wet ingredients separate, Creme butter and sugars then add pumpkin, eggs, vanilla. Then add dry ingredients.
Roll into balls and roll in coating bake at 350 for 10-12 minutes.

Mini Apple Pies

Preheat oven to 425 deg
1 refrigerated pie pastry (leave out at room temp for about 10 min)

2 medium Granny Smith apples
2 tsp lemon juice
1/4 cup brown sugar
1 tsp cinnamon
1/4 tsp ginger
1/8 tsp nutmeg
2 TBSP butter (Cut into 8 pieces)
1 egg lightly beaten
1-2 TBSP sugar

Peel core and dice the apples. Place in small bowl and toss with lemon juice, brown sugar, cinnamon, ginger and nutmeg.

Roll the pastry dough into a 16x8 inch rectangle on a floured surface. Cut into 4 inch squares.

Spoon 2 TBSP of the apple mixture onto the center of each square of dough. Top the filling of each pie with a piece of the butter, Brush the edges of the dough with some of the beaten egg. Fold the corners of the dough toward the middle covering the filling pinch the edges to seal. Place the filled squares on an ungreased baking sheet.

Brush the tops of the pies with the remaining beaten egg and sprinkle with the sugar. Bake until lightly browned 10-12 min. Cool the pies on the baking sheet for 2 minutes. Serve warm!

Chocolate Surprise Cookies

Preheat oven to 350 deg
3/4 cups butter softened
1/3 cup firmly packed light brown sugar
1 1/2 tsp vanilla
1 1/2 cups flour
1/8 tsp cinnamon
25 Hershey Kisses
1 1/2 TBSP confectioners (powdered) sugar
3/4 tsp unsweetened cocoa powder

combine the butter and brown sugar in a medium bowl, beat with mixer until light and fluffy. Add the vanilla. Combine the flour and cinnamon and add to the butter mix, mix well.

Shape the dough into 1 inch balls. Flatten into a 2 inch round. Place the round 1 inch apart on baking sheets place 1 chocolate candy in the center of each round. Enclose the candy with the dough, making sure the candy is completely sealed in the dough. Bake until golden, about 15 minutes.

Combine the powdered sugar and cocoa in a small bowl and sprinkle over the hot cookies. Cool the cookies on the baking sheets for 10 min, then transfer to wire racks.

Pineapple Grilled pork chops

1 8 Oz can pineapple rings drained and reserved
1/4 cup brown sugar
1/4 cup soy sauce
1/4 tsp garlic powder
4 pork chops
1 pinch black pepper
Mix sauce and place in zip lock bag and marinade pork chops over night in sauce reserve the pineapple rings

Cook chops on a grill on medium heat, Grill until browned (about 5-8 minutes each side)Place pineapple rings onto the grill and allow to cook until hot and the slices show grill marks serve on top of pork chops.

Homemade Terriaki sauce~ Gatherums

1 part Brown sugar
1 part soy sauce
2 parts water (or pineapple juice)
Thicken with cornstarch (if desired)

Crisp topping

Prepare fruit of choice with sugar, cinnamon, and flour (for thickening) Or buy a can of pie filling

Topping:1 cup quick cooking oats
1 cup flour
1 cup brown sugar
1/2 cup butter
1/4 tsp baking powder
1/4 tsp baking soda

( I usually double this topping recipe because it is so yummy and we like lots of the crispy top, it is pretty thin if you don't anyway!) Eat warm with vanilla ice cream for the best results!

Indoor Smores

8 cups Golden Grahams cereal
6 cups mini marshmallows
1 1/2 cups chocolate chips
5 TBSP butter
1/4 cup light corn syrup
1 tsp vanilla

Grease 9x13 pan
pour cereal, 1cup of marshmallows, and an extra 1/2 cup chocolate chips in a bowl
Heat 5 cups marshmallows, chips butter and corn syrup in sauce pan over low heat, stir till smooth stir in vanilla,
Pour mixture over cereal, stir till coated,
Press into pan and let cool

Black bean and Corn Salad

1/3 cup fresh lime juice
1/2 cup olive oil
1 clove garlic minced
1 tsp salt
1/8 tsp cayenne pepper
2 15 once cans black beans rinsed and drained
1 1/2 cups frozen corn
1 avodado peeled and pitted and diced
1 red pepper, chopped
2 tomatoes chopped
6 green onions thinly sliced
1/2 cup chopped fresh cilantro
Mix it all up YUMM!!!

Applesauce Pancakes~ allrecipes.com

2 cups dry pancake mix
1 tsp ground cinnamon
2 eggs
1 cup apple sauce
1 tsp lemon juice
1/2 cup milk

In a large bowl stir together pancake mix and cinnamon. Make a will in the center of the pancake mix. Add the eggs, applesauce, lemon juice and mil; stir till smooth

Cook on griddle till golden brown!

*** I used my homemade applesauce which already has cinnamon in it so I didn't add any cinnamon to mine, or lemon juice. My applesauce is chunky so the pancakes were SOOOO YUMM!

Tuna Salad take 2 ~ Allrecipes.com

1 (6 once) can tuna
1 large stalk celery minced
4 radishes
1 TBSP minced red onion
1/2 Granny Smith apple, minced
2 TBSP parsley
2 tsp lime juice
3 TBSP Mayo or Miracle whip
1/4 cup minced Pecans
Mix everything eat on bread, tortilla or plain

20 once package 15 bean mixture, soaked over night
5/8 ham bone
1 2/3 cup cubed ham
5/8 large onion, chopped
2 stalks celery, chopped
3 1/4 large carrots chopped
5/8 can diced tomatoes with liquid (14.5 ounces)
5/8 (12 ounces) vegetable juice
2 cups vegetable broth
1 tablespoon and 1 tsp Worcestershire sauce
1TBSP and 1Tsp Dijon mustard
2 tsp chili powder
2 bay leaves
3/4 tsp ground black pepper
2 tsp dried parsley
2 TBSP Lemon juice
4 2/3 cups low fat chicken broth
3/4 tsp salt

Boil beans and simmer for 30 min, then let soak overnight.
Drain, then add ham bone, ham and all other ingredients
Simmer over low heat, stirring occasionally for about 8 hours

This is the best ham and bean soup we have ever had and is a FAVORITE! At our house!!!

Sweet and Tangy Loose BBQ Beef Sandwich

7 LBS Beef roast
1 cup water
3TBSP vinegar
4 TBSP brown sugar
2 tsp dry mustard
4 TBSP Worcestershire sauce
3 cups ketchup
2 tsp salt
3/4 tsp black pepper
1/4 tsp cayenne pepper
6 cloves garlic

Put roast in slow cooker along with the water and cook on low for 2-4 hours (till it can be shredded)
Shred with fork, Add rest of ingredients and stir to cover meat and continue to cook on low for 4-6 hours. Serve on buns

Tuna Salad! ~ All recipes.com

Ingredients:
1 (15 ounce) can black beans, drained
1 (11 ounce) can white albacore tuna
3/4 cup fresh tomatoes, peeled, seeded
and chopped
1/3 cup finely chopped red onion
1 tablespoon minced serrano pepper

1/2 cup extra-virgin olive oil
2 tablespoons fresh lime juice
1/4 cup chopped parsley
1/4 cup chopped cilantro
Salt and pepper, to taste
6 large butter lettuce leaves
Directions:
1. In a large bowl, combine beans, tuna, tomatoes, onion, peppers, oil and lime juice. Toss gently, being careful to keep tuna in bite-size pieces. Cover and refrigerate at least one hour. Add parsley and cilantro; season with salt and pepper. Spoon tuna salad into lettuce leaves. Fold up leaves and eat taco style.

Cheese Soup with Broccoli~ Allrecipes.com

1 chopped onion
6 TBSP margarine (or butter)
1/3 cup four
salt and pepper to taste
4 cups milk
3 cups chicken broth
1 carrot shredded
1 cup broccoli florets
1/2 cup chopped celery
1 lb processed cheese cubed (Velveeta) although you could use cheddar as well)
*** I would double ALL the veggies except for the onion and add a little bit of cyan pepper)
Directions: Saute onion in butter/marg. until tender. Add flour and salt and pepper mix until smooth. Add the milk slowly until mixture is thick and bubbly

In a smaller pan bring the chicken broth to a boil add the carrots celery and broccoli. Cook about 5 minutes or until tender. Combine until broth and milk mixture and stir till fully blended.

Add cheese. Allow soup to heat over med until cheese is melted DO NOT boil because cheese will separate. Serve hot. My family LOVED this one! (Larry says it is good cold the next day as well!

20 small mini pretzels
20 chocolate covered caramels (dove or rollos work great)
20 pecan halves
preheat oven to 300 deg
arrange the pretzels on cookie sheet place on chocolate on each one
bake for 4 minutes while candy is warm gently press pecan half into each one

Peanut Brittle ~ Grandma Nola

1 cup sugar
1 cup raw peanuts
1/2 cup corn syrup
1/8 tsp salt
1)Combine first 4 ingredients and microwave 4 minutes on high
2) Stir and microwave 2 minutes more
3) add 1 tsp margarine and 1 tsp vanilla, stir and microwave on high 2 minutes more
4) add 1 tsp baking soda and stir until foam disappears. Pour onto a greased cookie sheet (or Silpat) While hot pull and stretch till syrup is quite thin Let set to harden and break into peices

(I actually took 2 of their salads and combined them. I liked the dressing for one better and some of the stuff in the salad from another. This one was a HUGE hit at our Christmas party!)
2 cups pecan halves (I bought pre-glazed ones)
12 cups mixed salad greens
1 1/2 cups dried cranberries
1 med red onion thinly sliced
crumbed feta cheese

3/4 plus 2 TBSP Olive oil (or veg oil)
1/2 cup sugar
1/3 cup red wine or balsamic vinegar
2 TBSP and 2 tsp sour cream
1 1/4 tsp dijon mustard

Easy Oreo truffles ~ Allrecipes.com

1 package of Oreo's divided
1 8 once package of cream cheese softened
2 8 once packages of semi sweet baking chocolate melted
Crush of the oreo cookies till very fine and set aside.
crush remaining cookies to fine crumbs and place in bowl. Add cream cheese and mix until well blended (I use my kitchen aid) Roll mixture into small balls
Dip balls in melted chocolate and place on wax paper covered baking sheet or silpat. Sprinkle remaining cookies on truffles while chocolate is still wet.
Refrigerate until firm (about 1 hour)

Easy Alfredo Sauce~ All recipes.com

1/2 cup butter
1 (8 oz) package of cream cheese
2 tsp garlic powder
2 cups milk
6 onces grated parmesan cheese
1/8 tsp black pepper
I always add a little Basil to my alfredo sauce.
I then put chicken, noodles and some motzarella cheese mix it all and then bake it till the cheese is all melty (only about 15 minutes since the sauce should be hot already
