Cream pie~ Grandma (Donna) Workman

Bake one pie shell

Heat 2 cups of mil near boiling (DON"T BOIL!)

separate bowl mix
 3/4 cup sugar
1/8 tsp salt
2 eggs
1/2 cup flour

Then stir in to the hot milk till comes to a boil
remove from heat and add
 2 TBSP butter
1 tps vanilla

cool a little and add what ever fruit bananas, coconut.... and pour into pie shell. EAT YUMM. Also good just being vanilla!

Chocolate cookies with mint frosting~ Six sisters blog

Grasshopper Chocolate Mint Cake Mix Cookies

Cookie bottom:
1 Devil's Food Cake Mix (I like the ones with pudding in the mix the best)
1/2 cup oil
2 eggs

Mix cake mix, oil, and eggs together (do not follow the directions on the back of the cake mix- disregard them completely). Drop spoonfuls of dough onto baking sheet. Bake at 350 degrees for 6-9 minutes (don't cook any longer than that! You don't want them to be overdone!). Let cookies cool completely.

Peppermint Frosting:

1/2 c. butter, softened
2 Tablespoons milk
2 c. powdered sugar
1 1/2 tsp. peppermint extract
Green food coloring (optional- I added about 8 drops to get the colors of green that I had)
Mix together all the ingredients (add more or less powdered sugar until you get the consistency you like). Spread on top of each cooled cookie.
Chocolate Topping:
2 1/4 c. semi-sweet chocolate chips
3/4 c. butter
Melt chocolate chips and butter together in a double boiler OR in a microwave (I usually microwave for 30-second intervals, then stir and repeat until the chips are fully melted). Spread melted chocolate on each cookie- I have found that it works best to use the back of a spoon to spread the chocolate around.
*These little cookies are super rich! I think that if you didn't want them to be so rich, use a milk chocolate cake mix and milk chocolate chips. 
 
I don't usually add the chocolate topping, I have trouble with it melting and sliding off. But I have made these and most people I have made them for LOVE them and request them again and again.

Chocolate Chunk Peanut butter swirl Fudgy cookies

1 cup creamy peanut butter
2 sticks butter
3/4 cup brown sugar
2 eggs
1 TBSP vanilla
1 3/4 cup flour
1 tsp baking soda
1/2 tsp salt
2 cups chocolate chunks (I used chocolate chips)
1 cup cocoa powder

1) Preheat oven to 350
2) Put peanut butter in the freezer till firm (about 30 minutes)
3) cream butter and peanut butter add eggs and vanilla, beat until well combined
4) mix in dry ingredients and chocolate chunks slowly mixing until just combined. Then drop dollops of frozen peanut butter into dough and turn mixer on for just a few turns of the mixer to get swirls of peanut butter through the dough. Scoop dough onto cookie sheets and bake for 14 min let cook on baking sheet for 5 min then transfer. (this recipe says to cook for 14- 16 min) I think they are ok at 14 but I think a minute or 2 less would be great they would be a bit softer. They weren't hard, I just like my cookies softer.

Oatmeal, banana, chocolate chip, peanut butter cookies

1/2 cup butter
3/4 cup brown sugar
1 1/8 cup white sugar
2 eggs
1 tsp vanilla
1 banana (the riper the better)
1/2 cup peanut butter
1 1/2 cup flour
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 1/2 cup quick oats
1 bag chocolate chips

Preheat oven to 350
Cream butter, and sugars till fluffy. Add eggs beating well then stir in vanilla, banana, and peanut butter.
Combine flour baking powder, soda, and salt and stir in gradually to creamed mix. Then stir in oats and chocolate chips drop by spoonfulls.
They say this is sticky so if you don't have a silpat you might want to use parchment paper.
Bake for 8-10 min I use 12 when using my silpat but they were perfect soft in the middle and a crisp on top.

Coconut Lime chicken

4 chicken breasts
marinade in
6 TBSP oil
zest of 2 lime
2 tsp ground cumin
4 tsp soy sauce
3 tsp salt
4 TBSP sugar
1 cup coconut milk
pinch cayanne
(I only marinaded in 1/2 the sauce so we could use the other half for dipping or pouring over the chicken and rice when we ate it) The recipe I got this from cooked the chicken on the stove top grill style in the sauce but I grilled it on the out door grill brushing on the marinade each time I turned it. It was YUM!
When chicken is cooked through top with chopped cilantro and fresh lime wedges. serve with rice and my favorite Pina Colada Salad!!!

Pina Colada Salad

Make a regular green salad with all the stuff you love then add some shredded coconut, pineapple tidbits, and macadamia nuts.
Dressing
8.5 oz cream coconut
1/4 cup cider vinagar
1 (0.7 once)  package of dry Italian dressing mix
mix dressing and put some on your YUMMY salad!

Mint Chocolate Brownie

Make a batch of brownies from a box

Mint layer
3 1/2 cups powdered sugar
1/4 cup butter or marg softened
1/4 cup whipping cream
3 oz cream cheese softened
1/4 tsp mint extract
4 drops green food coloring

Topping: Melt together
1/2 cup whipping cream
1 bag semisweet chocolate chips
1/2 cup butter (NOT margarine)

Spread mint layer over brownies when cool, then pour topping over mint layer.
My kids loved these so much! So did the missionaries we fed that night and all the kids that my kids shared them with at lunch the next day at school!





Coconut chicken with orange/ peach sauce

1 egg
1 cup coconut flakes
1/2 cup flour
1/2 tsp garlic powder
1/2 tsp salt
1/4 tap black pepper
3 skinless boneless chicken breasts
1/2 cup butter melted
1/2 cup orange marmalade ( I  used peach jam since I never have orange and it was SOOOOO GOOD!)
2 TBSP Dijon mustard
Preheat oven too 400 deg

Beat egg set a side
mix the coconut, four garlic powder, salt and pepper in shallow bowl. dip chicken in egg then in coconut mixture. place on baking sheet then drizzle with the melted butter. Bake till cooked through

Mix dipping sauce by stirring the jam and mustard together.
YUM My kids LOVED this!
