Classic Macaroni Salad~ Allrecipes.com
I am embarrassed to say I have NEVER made macaroni salad. Not that I don't enjoy it when other people make it I just never have. My mom always made the BEST potato salad and so I always made her salad. This week Larry asked me to make macaroni salad for our traditional 4th of July BBQ, I forgot and so he went to make it himself. I told him which website I like to use to find recipes I want. He found this one made it himself and it was so good it is defiantly a keeper!
4 cups uncooked macaroni
1 cup Mayo (we only use Miracle whip at our house!)
1/4 cup vinegar
2/3 cup white sugar
2 1/2 TBSP mustard
1 1/2 tsp salt
1/2 tsp pepper
1 large onion chopped
2 stalks of celery chopped
1 green bell pepper chopped (seeded)
He also added 4 hard boiled eggs sliced, and a hand full of cubed cheese
Cook Macaroni, rinse drain
In a large bowl mix together the rest of the ingredients, then add noodles and refrigerate 4 hours. We didn't have 4 hours and ate it less then an hour after it was made. It was still really yummy and even yummier the next day as left overs!
Oh and after Larry had mixed all the "dressing" portion we tasted that part and I think just the dressing part would be really good on a green salad as well!!!
