Chocolate cookies with mint frosting~ Six sisters blog

Grasshopper Chocolate Mint Cake Mix Cookies

Cookie bottom:
1 Devil's Food Cake Mix (I like the ones with pudding in the mix the best)
1/2 cup oil
2 eggs

Mix cake mix, oil, and eggs together (do not follow the directions on the back of the cake mix- disregard them completely). Drop spoonfuls of dough onto baking sheet. Bake at 350 degrees for 6-9 minutes (don't cook any longer than that! You don't want them to be overdone!). Let cookies cool completely.

Peppermint Frosting:

1/2 c. butter, softened
2 Tablespoons milk
2 c. powdered sugar
1 1/2 tsp. peppermint extract
Green food coloring (optional- I added about 8 drops to get the colors of green that I had)
Mix together all the ingredients (add more or less powdered sugar until you get the consistency you like). Spread on top of each cooled cookie.
Chocolate Topping:
2 1/4 c. semi-sweet chocolate chips
3/4 c. butter
Melt chocolate chips and butter together in a double boiler OR in a microwave (I usually microwave for 30-second intervals, then stir and repeat until the chips are fully melted). Spread melted chocolate on each cookie- I have found that it works best to use the back of a spoon to spread the chocolate around.
*These little cookies are super rich! I think that if you didn't want them to be so rich, use a milk chocolate cake mix and milk chocolate chips. 
 
I don't usually add the chocolate topping, I have trouble with it melting and sliding off. But I have made these and most people I have made them for LOVE them and request them again and again.

Strawberry Frosting & cake~ Allrecipes.com

Frosting:
1/2 cup butter
4 3/4 cup powdered sugar
5 oz of frozen strawberries (slightly defrosted)
beat with mixer till creamy (add more sugar for stiffer frosting) YUMM!
Strawberry Cake
1 package yellow cake mix
1 3oz package of strawberry flavored gelatin mix
3 TBSP flour
1/2 cup water
2/3 cup veg oil
4 eggs
5 oz frozen strawberries
Preheat oven to 350 prepare 2 9inch round pans or 1 9x13 pan
In large bowl stir together cake mix, gelatin mix and flour. Make a well in the center and pour in water oil and eggs. Stir in the strawberries. Beat on low speed until blended. Scrape bowl and beat 4 min on med speed. Pour into pans.
Bake for 30 minutes and allow to cool.

Surprise Cookies~ Martha Stewart.com

Preheat oven to 375 deg. In a medium bowl, whisk together
1 3/4 cup flour
3/4 cup cocoa powder*
1/2 tsp baking soda
1/2 tsp salt
set aside
In separate bowl cream together 1/2 cup butter and 1 cup sugar with electric mixer until light and fluffy. Then add
1 large egg
1/2 cup milk
1tsp vanilla
beat until well combined. Add reserved flour mixture mix on low until well combined
Using a tablespoon drop dough onto baking sheets. Bake until cookies begin to spread and become firm (10-12 minutes)
Remove baking sheet from oven and place cut large marshmallow** in center of cookie pressing down slightly. Return to oven for 2 more min (until marshmallow starts to melt)Transfer cookies to rack to cool completely before frosting.
Spread chocolate frosting over the marshmallow. YUMM!
* I didn't have cocoa powder so I melted some semi sweet baking chocolate instead worked great!!!
**Next time we make these we want to try putting a caramel in under the marshmallow or instead of

German Chocolate Cake Frosting~ Michelle Quinn

1 cup evaporated milk
1 cup sugar
3 egg yoks
1/2 cup butter 1 tsp vanilla
Cook over med heat till thick
add 1 1/2 cup coconut
1 cup pecans
Spread over cooked German chocolate cake and eat the whole thing!

Carrot Cake ~ Mom Workman

Mix
1 cup oil
2 cups sugar
3 eggs
2 cup shredded carrots
1 small can crushed pineapple drained
1 tsp vanilla
add 3 cups flour 1 cup chopped nuts
1 cup raisins
1tsp salt
1tsp soda
1 tsp cinnamon
mix well and bake 45 min at 350 deg

Cream Cheese Frosting
1)8 oz pkg cream cheese
1/2 stick butter
2 tsp vanilla
1Lb powderd sugar
soften butter and cream cheese, creame together and add vanilla and powdered sugar frost cake and sprinkle with 1 cup coconut.
