Stuffed Green Sweet Peppers~ Kelli Gard

(I have modified this one to be faster/ easier for me)
4 Large green sweet peppers
1can of black beans rinsed and drained
corn
1 box of Spanish rice
fresh cilantro
Cheddar or Monterrey Jack cheese
Fill pot with water and bring to boil while you clean out the peppers and leave whole only removing the tops, chop the tops to add to the rice mixture later. Boil Peppers for about 4-5 minutes
Mean while in a med sauce pan combine the chopped sweet pepper tops, black beans, corn, and uncooked Spanish rice. Brown with a little butter (according to box directions) and cook according to box directions. Toss to mix and add 1/2the cheese.
Fill the peppers and top with remaining cheese and bake in oven at 400 deg for 15 minutes or till cheese melts

No fuss chicken~ Sherri Gentry

1 bottle (16 oz) Russian or Catalina dressing
2/3 cup Apricot jam
2 packets of onion soup mix
Mix together and pour over chicken breast
Cook in crock pot for as long as you want (all day or just till the chicken is all done)or in oven at 350 for 40 minutes
Shred and serve over rice

Chicken Ritz Casserole~ Allison Bevans

2-3 cups chicken cooked and shredded
1 can cream chicken soup
1 can cream mushroom soup
1 pint sour cream
1/2 cup water or chicken broth
1 tube Ritz crackers
6 TBSP butter or Margarine melted
In sauce pan combine first 5 ingredients and bring to warm temp.
Melt butter and crush Crackers and mix together. Pour soup mixture in 9x13 pan (or 2 quart casserole dish) and sprinkle crackers on top. Bake 350 deg until top is golden (about 20 minutes) serve over noodles or rice.

Beef Stroganoff~ Mom Workman

1 LB beef cut into strips
2 1 1/2 cup beef broth
1 tsp garlic
2 TBSP ketchup
salt and pepper
2 TBSP butter or Marg
8 oz mushrooms
1 med onion chopped
3 TBSP flour
1/2 cup water 1 cup sour cream
Melt butter and cook onion and mushrooms until but but slightly krisp. Remove from pan and set aside. Add beef to pan brown and add beef broth. Ketchup, garlic salt pepper. Bring to Boil and cover and lower heat. Simmer for 20 minutes (until meat is tender) Shake flour and water and stir in till thickened. Add Sour cream and serve immediately.
* I like to add a can of golden mushroom soup with the ketchup step.
Serve over noodles or rice
