4 cans white beans
16 oz carton sour cream
2 cups chicken broth
1/2 lb Colby Jack or Pepper jack cheese
3 lb chicken breasts
1 lg onion
green pepper
1-2 jalapeno peppers
Cook chicken and break into small pieces. Mix beans, chicken broth, onions and peppers. Add some garlic powder, salt and pepper, Cook until onions and peppers are tender, Add chicken and cook till heated through Thicken with flour and water if desired. Then sprinkle cheese over top and let it melt

Cheese Soup with Broccoli~ Allrecipes.com
1 chopped onion
6 TBSP margarine (or butter)
1/3 cup four
salt and pepper to taste
4 cups milk
3 cups chicken broth
1 carrot shredded
1 cup broccoli florets
1/2 cup chopped celery
1 lb processed cheese cubed (Velveeta) although you could use cheddar as well)
*** I would double ALL the veggies except for the onion and add a little bit of cyan pepper)
Directions: Saute onion in butter/marg. until tender. Add flour and salt and pepper mix until smooth. Add the milk slowly until mixture is thick and bubbly
In a smaller pan bring the chicken broth to a boil add the carrots celery and broccoli. Cook about 5 minutes or until tender. Combine until broth and milk mixture and stir till fully blended.
Add cheese. Allow soup to heat over med until cheese is melted DO NOT boil because cheese will separate. Serve hot. My family LOVED this one! (Larry says it is good cold the next day as well!

warm and serve with chips, sour cream, and shredded cheese

Clam Chowder ~ Mom Workman
Serves 6
1 small onion chopped
1 1/2 cup diced potatoes (2 -3)
1/2 cup shredded carrots
1) 8 oz can minced clams
1/2 cup butter
1/2 cup mild
1 tsp salt
1 tsp sugar
pepper to taste
Drain juice from clams onto chopped veg. Cover with water to just covered. Bring to boil. Cover and lower heat and simmer 20 minutes, until potatoes are very soft.
In separate pan, melt butter stir in flour. Add milk and stir constantly until thickened. Add to potatoes, stir in clams and seasoning.
Add crisp bacon for different seasoning, omit clams and add corn for corn chowder,or leave out clams for potato soup
