Coconut chicken with orange/ peach sauce

1 egg
1 cup coconut flakes
1/2 cup flour
1/2 tsp garlic powder
1/2 tsp salt
1/4 tap black pepper
3 skinless boneless chicken breasts
1/2 cup butter melted
1/2 cup orange marmalade ( I  used peach jam since I never have orange and it was SOOOOO GOOD!)
2 TBSP Dijon mustard
Preheat oven too 400 deg

Beat egg set a side
mix the coconut, four garlic powder, salt and pepper in shallow bowl. dip chicken in egg then in coconut mixture. place on baking sheet then drizzle with the melted butter. Bake till cooked through

Mix dipping sauce by stirring the jam and mustard together.
YUM My kids LOVED this!

Pumpkin Snickerdoodles

3 3/4 cup flour
1 1/2 tsp. baking powder
1/2 tsp cinnamon
1/4 tsp nutmeg
1 cup unsalted butter
1 cup sugar
1/2 cup brown sugar
3/4 cup pumpkin puree
1 large egg
2 tsp vanilla

For coating:
1/2 cup sugar (they say 1 tsp cinnamon and 1/2 tsp ginger and dash of allspice
but I used Pumpkin pie spice!!!)

Mix dry and wet ingredients separate, Creme butter and sugars then add pumpkin, eggs, vanilla. Then add dry ingredients.
Roll into balls and roll in coating bake at 350 for 10-12 minutes.

Mini Apple Pies

Preheat oven to 425 deg
1 refrigerated pie pastry (leave out at room temp for about 10 min)

2 medium Granny Smith apples
2 tsp lemon juice
1/4 cup brown sugar
1 tsp cinnamon
1/4 tsp ginger
1/8 tsp nutmeg
2 TBSP butter (Cut into 8 pieces)
1 egg lightly beaten
1-2 TBSP sugar

Peel core and dice the apples. Place in small bowl and toss with lemon juice, brown sugar, cinnamon, ginger and nutmeg.

Roll the pastry dough into a 16x8 inch rectangle on a floured surface. Cut into 4 inch squares.

Spoon 2 TBSP of the apple mixture onto the center of each square of dough. Top the filling of each pie with a piece of the butter, Brush the edges of the dough with some of the beaten egg. Fold the corners of the dough toward the middle covering the filling pinch the edges to seal. Place the filled squares on an ungreased baking sheet.

Brush the tops of the pies with the remaining beaten egg and sprinkle with the sugar. Bake until lightly browned 10-12 min. Cool the pies on the baking sheet for 2 minutes. Serve warm!

Chocolate Surprise Cookies

Preheat oven to 350 deg
3/4 cups butter softened
1/3 cup firmly packed light brown sugar
1 1/2 tsp vanilla
1 1/2 cups flour
1/8 tsp cinnamon
25 Hershey Kisses
1 1/2 TBSP confectioners (powdered) sugar
3/4 tsp unsweetened cocoa powder

combine the butter and brown sugar in a medium bowl, beat with mixer until light and fluffy. Add the vanilla. Combine the flour and cinnamon and add to the butter mix, mix well.

Shape the dough into 1 inch balls. Flatten into a 2 inch round. Place the round 1 inch apart on baking sheets place 1 chocolate candy in the center of each round. Enclose the candy with the dough, making sure the candy is completely sealed in the dough. Bake until golden, about 15 minutes.

Combine the powdered sugar and cocoa in a small bowl and sprinkle over the hot cookies. Cool the cookies on the baking sheets for 10 min, then transfer to wire racks.

Pineapple Grilled pork chops

1 8 Oz can pineapple rings drained and reserved
1/4 cup brown sugar
1/4 cup soy sauce
1/4 tsp garlic powder
4 pork chops
1 pinch black pepper
Mix sauce and place in zip lock bag and marinade pork chops over night in sauce reserve the pineapple rings

Cook chops on a grill on medium heat, Grill until browned (about 5-8 minutes each side)Place pineapple rings onto the grill and allow to cook until hot and the slices show grill marks serve on top of pork chops.

Homemade Terriaki sauce~ Gatherums

1 part Brown sugar
1 part soy sauce
2 parts water (or pineapple juice)
Thicken with cornstarch (if desired)

Crisp topping

Prepare fruit of choice with sugar, cinnamon, and flour (for thickening) Or buy a can of pie filling

Topping:1 cup quick cooking oats
1 cup flour
1 cup brown sugar
1/2 cup butter
1/4 tsp baking powder
1/4 tsp baking soda

( I usually double this topping recipe because it is so yummy and we like lots of the crispy top, it is pretty thin if you don't anyway!) Eat warm with vanilla ice cream for the best results!
